I cooked up jackfruit vegan style barbeque with vegan coleslaw again today. The vegan coleslaw is just whatever your favorite slaw recipe is, but mixed with vegan mayo instead of regular mayo. By the way, Follow Your Heart original Veganaise is our favorite and Just Mayo’s really good too.
But! If that jackfruit word sounds really weird to you, I get it because it sure did to me when I first heard the term. In fact, it sounded so weird to me that it took me over a year after going vegan to even start learning more about it and then trying this odd sounding fruit from south and southeast Asia. Today, it’s one of the main staples that we keep on hand and has become the primary ingredient in two of our favorite meals — vegan barbeque and vegan “chicken” salad.
So, if you’re already vegan and haven’t tried jackfruit, I really encourage you to give it a try. If you’re like me, you will kick yourself for not having done so loooooong ago. And, if you’re not vegan, but just want to try something new, I’m pretty sure you won’t be disappointed. You will, however, be super surprised at how much it resembles pulled pork once you shred it up and how much it tastes like “real” barbeque when cooked and mixed with your favorite barbeque sauce. You can also use jackfruit to whip up really tasty mock tuna or chicken salad, cheesy tacos or burritos and so much more.
There are a ton of jackfruit recipes online as well as websites that teach us about all its many, many benefits.
